I will not link to PETA


I added a new link today: Vegan Lunch Box, which I stumbled upon quite randomly. I was instantly fascinated; "Jennifershmoo" posts near-daily pictures of her son's lunch in a nifty, organized lunchbox. No, I'm not a vegan or a vegetarian though as I mentioned before, I did pledge vegetarian for two of my high school years. I don't remember why except I was persuaded by my friend, Janet, to join her veggie ranks. She also successfully convinced me to join PETA which continues to be a lifelong embarrassment. I even stuck a "FUR IS DEAD" bumper sticker on my Dad's Toyota Corolla rear window. I was so obnoxious.

After two years I wised up, disowned PETA, and ate animals once again. Even so, I crave veggie meals at times and partake with no guilt. Most vegan/vegetarian recipes are extremely healthy and tasty, at least to me - God wired me so. I'm also beginning to think my body does not respond well to dairy and/or Equal, but I haven't confirmed anything yet (I already know Splenda is my enemy). And, I'm always trying to curb my sweet tooth and cut down on sugar. Thus another reason why Vegan Lunch Box is a fun discovery. Some of her recipes and meal ideas actually look good to me. In fact, I made Christine's Oatmeal Apple Muffins today and I think Ms. Shmoo would approve, and stick a muffin in her son's sleek lunchbox:

Oatmeal Apple Muffins

1 cup whole wheat flour
1 cup rolled oats
1/2 teaspoon sea salt
3 teaspoons baking powder
1/2 teaspoon nutmeg
1-1/2 teaspoons cinnamon
1-1/2 teaspoons Stevia powder
1/4 cup applesauce*
3/4 cup soy or rice milk**
1/4 cup oil***
1 medium apple, coarsely chopped****
3/4 cup raisins

Preheat oven to 375 degrees. Mix first 7 ingredients thoroughly. In a separate bowl mix the remaining ingredients. Gradually mix dry ingredients into the moist ingredients. Spoon into greased muffin tins.***** Bake 25-30 minutes, or until a toothpick comes out clean when inserted into the center of a muffin.******

*I recommend Whole Food's 365 Organic Cinnamon Applesauce.
**I used Silk Organic Unsweetened Soy Milk.
***I used vegetable oil, but I'd love to hear other suggestions.
****I recommend a Granny Smith apple, and I peeled mine in addition to chopping.
*****I used cute, floral, paper muffin liners instead, and sprayed 'em with Baking Pam right after I turned on the oven.
******These muffins are excellent and taste Very Granola - just like you would buy off the shelf at Whole Foods! Kierstin's Banana Muffins are the typical, exquisite, Homemade taste. Both types of muffins are necessities in life.

I'm giggling at the PETA sticker. Please don't think my mom (a card-carrying PETA member) doesn't have a bumper sticker on her car that says, "REAL PEOPLE WEAR FAKE FUR." And I don't think I've told you the story where she sat on the stairwell in our house and sobbed for 30 minutes after she saw the pic of Steven with his first deer kill :)

Wow - those lunches... Wow. Do you think if I became a vegan that I'd start cooking like that for my own munchkins? I'm guessing not... Pretty amazing stuff, that.

FYI, I made these muffins again today, and I used 4 individual packets of Stevia powder, per Christine's suggestion. I left out the apple for a change, and also due to my recovering back - I didn't feel like peeling and chopping.
