OK, so Christine hipped me to stirring coconut oil into coffee and that was yum-my. Then, she informed me that unsweetened coconut milk is also tasty in coffee or tea. I am here to say she is correct. Coconut milk is so similar to half & half that it almost brought me to tears this morning. Well, not really, but I was pretty enthusiastic about my tea. I was also excited to find tweakable recipes on Thai Kitchen's web site. Coconut chicken. Mmm.
THEN, Christine enlightened me to coconut butter. Soon after, I found my way to an online forum for fellow Yeasties. A kind lady named Elaine posted this recipe:
Coconut Cream Stuff (she doesn't have name for it yet):
1/2 cup unsweetened coconut flakes.
1/2 cup coconut cream (or coconut butter).
1/2 tsp. vanilla.
A dash of sea salt.
1/8 tsp. pure stevia powder (or other natural sweetener. I used Sweet-n-Natural to taste.).
Place in a bowl and microwave for 30 seconds to soften the coconut cream, then mix well. Allow to sit in the refrigerator for a bit.
Options:
Add cinnamon (also antifungal) or carob powder (I added both today).
Add carob chips.
Add other flavorings such as cherry, almond, or maple.

The beauty of this snack is that coconut-anything is very antifungal, beneficial to your thyroid, and helpful for losing weight. And delicious all the while. Thank God for coconuts. There is even coconut flour!
By the way, Elaine warned me that chocolate (of any kind) may not be the best idea for folks fighting a systemic candida overgrowth. I won't elaborate here because I think it depends on how sensitive to yeast you are, and how far along you are in treatment. I will hold off on Daisy's yeast-free brownies - for now. Truly, thank GOD for coconut!! Who needs dairy anymore? I just had a snack of coconut butter and pear, and it was a dessert as far as I'm concerned. I can't wait to get coconut cream!
I am DEFINATELY going to have to buy some coconut products and try them out, especially for the coffee, sounds delicious! Thanks for the info.
I'm sipping chai w/coconut milk this morning. Oh man.
